Italian Pasta: Carbonara

We basically loved more after hearing the story of Carbonara.
It’s a lunch of Italian coal mining workers recipe. (I believe Italians born as master chefs.) It’s energy booming food for hard work. They prepare pasta and add egg yolk and cheese. The black pepper is importantly used for dominating the coal taste.
As a Mediterranean it’s not suprise to like Italian cuisine. My Aussie partner doesn’t only like it but also cook it many times.

Ingredients
3 large free-range egg yolks
40 g grated Parmesan cheese or hard cheese, and more for serving
150 g piece of higher-welfare pancetta or Guanciale or thick cut bacon or beef or mushroom for vegetarian
200 g dried spaghetti
1 clove of garlic
extra virgin olive oil
Mix the egg yolks and cheese in a cup
Cut the meat small or mushroom
Boil the spaghetti
Heat the pan and cook the meat or mushroom on middle-heat oven add the black pepper
Smash the garlic and add to pan with meat for its flavor.
When the meat leaves the oil crisp the meat with higher heat for 5 mins
Get the garlic out and add the spaghetti
Mix all meat, oil, and add water of spaghetti not to burn
After mixing all well add the egg and cheese mix
Be carefully mix not to have noodle :)
The mixture should be creamy with water, egg and cheese mix
For serving add more cheese and pepper
*The parmesan and guanciale is salty.
